Asparagus and salmon rolls

A riff on Asian salad rolls, these slim parcels of asparagus and smoked salmon are easier to make than you might think.
Ingredients
- 2 bunches thin asparagus
- 1 lemon
- 2 tbsp (30 mL) regular mayonnaise or sour cream
- 1 tsp (5 mL) Dijon mustard
- 2 tbsp (30 mL) white-wine vinegar
- 1 tbsp (15 mL) olive oil
- Generous pinches of salt and granulated sugar
- 1 shallot, finely chopped
- 1 tbsp (15 mL) capers, chopped
- 200-g pkg smoked salmon
- 1 bunch fresh chives
- 12 rice-paper rounds
