Fast-roasted fish steaks with tomatoes and pesto

It doesn't get much easier than this flavourful pesto fish bake.

Ingredients

  • 1 tbsp ( 15 mL) olive oil
  • 2 fish steaks, such as halibut, at least 1 inch (2.5 cm) thick
  • 1 cup ( 250 mL) flavourful meatless spaghetti sauce
  • 1 tsp ( 5 mL) basil pesto

  1. Preheat oven to 500F (260C). Pour oil into a 9-inch (23-cm) pie plate and turn fish in oil until coated. Pour spaghetti sauce around fish. Spread 1/2 teaspoon (2 mL) pesto on top of each fish steak. Place a piece of foil loosely overtop. Bake in centre of 500F (260C) oven for 15 minutes, stirring sauce every 5 minutes. Serve with rice and a vegetable sauté.
