Easy hoisin-chicken salad rolls

Ingredients

  • 1/4 cup hoisin sauce
  • 2 tsp dark sesame oil
  • 2 cups shredded cooked chicken, about 1/2 a rotisserie chicken (skin discarded)
  • 1 small red pepper, sliced
  • 8 red-leaf lettuce leaves, washed and dried
  • 4 green onions, cut into 4 inch strips
  • 1 medium cucumber, sliced into 4 inch strips
  • 8 rice paper wraps
Add to grocery list
  1. Stir hoisin with sesame oil in a small bowl. Lay a damp kitchen towel on counter. Fill a pie plate with warm water and place beside towel. Line up ingredients.
  2. Dip 1 rice-paper round in water until pliable, about 30 sec. Lay softened round on damp towel. Place a lettuce leaf near the bottom. Top with about 1/4 cup chicken. Drizzle with 1/2 tsp of hoisin mixture. Layer with 1 piece each of green onion, cucumber and pepper. Lift rice-paper edge closest to you up and over filling, then roll toward the centre. Fold in sides, then continue rolling to form a log. Set seam-side down on a platter. Repeat with remaining ingredients. Slice rolls in half diagonally.

  1. This is also good without the rice paper wraps - just roll a lettuce leaf (iceburg is best) around the chicken, onion and sauce!

  2. I would try it with Bib lettuce which is much more pliable than iceburg, unless you're looking for a crunch.
