Hearty quinoa and bean soup

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 1 carrot, diced
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1/3 cup dry quinoa
  • 2 cups vegetable broth
  • 540 mL can white kidney beans, drained and rinsed
  • 2 cups baby spinach
Add to grocery list
  1. Heat a large saucepan over medium. Add oil, then onion. Cook until onion is soft, about 3 min. Add carrot, garlic, cumin, coriander and quinoa. Cook for 2 more min. Pour in broth and 2 cups water. Bring to a boil, then reduce heat to medium-low. Simmer, partially covered, until quinoa is cooked, about 15 more min.
  2. Stir in beans and spinach. Cook until beans are hot and spinach is wilted, 2 to 3 more min. Serve immediately.
  • Prep Tip:

    No need to chop the spinach . Just toss it into the simmering soup and it wilts perfectly.

  1. This is a delicious soup that is so easy to make. My kids loved it as well. I omitted the ground coriander as I had none but it was still great.

  3. The sodium content in this recipe is over the top. I used blue menu white beans with no salt added to cut down on the sodium content. Soup is OK but not one that I would make again.

  4. I agree that this is a fairly bland soup. I wouldn't make it again. I think the comment about the sodium content is funny considering the recipe doesn't call for salt. I ended up using homemade chicken broth (no salt added) and normally I would buy reduced sodium broth. It's very easy to control the sodium in this recipe.

  6. Bland? I omitted the cumin and coriander and substituted 1 tsp. thai red curry paste. I also added a chopped tomato and 1/2 tsp. salt. Much tastier!

  8. Awesome soup! Goes great with Green onion & cheddar scones. Instead of the 2 cups of water, I added an additional 2 cups of vegetable broth to give it more flavour.... turned out.... well.... Awesome!

  9. I made this last night but I cut out most of the cumin & coriander (more like a pinch of each), used half the garlic and added chunked sweet potatoes at the same quantity of carrots. So yummy & healthy!

  11. All you guys, that complained about the blandness of the recipe - don't you ever TASTE what you're making while cooking? If something tastes bland, then add more spice OR add another spice you like that'll bump up the flavour. Don't just come on here and complain of blandness, when that's in your control.
